The enzyme(s) now commonly referred to as allene oxide synthase(AOS), CYP74 was reported in 1966 as an activity in flaxseed that metabolizedlinoleic acid hydroperoxide to an alfa-ketol derivative. Early publicationsestablished that other associated products from unsaturated fattyacid hydroperoxides are y-ketols and cyclopentenone fatty acids.
